DocumentServer with database running on an different machine

I've installed and configured DocumentServer and the plugin for Nextcloud following the official documentation. So I installed postgres as described and all works.

I would prefer though to connect to an external database running on a different VPS. I changed:
the "host" parameter in the default.json file pointing it to the database server but it doesn't work and I've nothing showing up in the logs.

Basically what happens is that the interface loads but not completely. I see the nextcloud header and the onlyoffice toolbar and that's it.

I've verified that the database is reachable and there is no credentials issue.

I also tried the same with mysql which would be my favorite database but I have the same issue. I changed "type", "host" and "port" parameters in default.json but it seems like one of the documentserver components are not notified of the fact that the server is no more "localhost"

I rebooted the vps every time I changed "default.json' to be sure that the changes were applied correctly.

So, how can I use documentserver with mysql running on another host?
