However when I push the image to AWS and run the container in an EC2 instance, the fonts aren't added correctly
Could you please elaborate on this? Have you tried to put the required fonts to the container again?

You are using some old version of Document Builder. The Search and Replace method is not available in this version. Please install the current Document Server version 5.5 and use the Document Builder available there:

Windows 10 is not supported, you have to install the Community Edition on server versions of Windows (Windows Server 2008 R2 or newer).
