For migrating from 8.1 to 8.5 follow the instructions:
1) Created BD dump, make a backup of /opt/onlyoffice/Data
2) Remove OnlyOffice 8.1
sudo apt-get remove onlyoffice (please do not remove any files manually)
3) Install OnlyOffice 8.5
sudo apt-get install onlyoffice-communityserver
Database and all necessary files should be picked up automatically

To upgrade to Docker-Community Server after performing these steps (it is necessary to upgrade to 8.5 because of difference in DB) please do the following:

Create BD dump, make a backup of /opt/onlyoffice/Data once more

sudo apt-get remove onlyoffice-communityserver

Reboot the machine

Install Docker

sudo apt-get install docker.io

Install ONLYOFFICE

sudo docker run -i -t -d -p 80:80 -p 443:443 -v /opt/onlyoffice/Data:/var/www/onlyoffice/Data \
--link onlyoffice-mail-server:mail_server \
--link onlyoffice-document-server:document_server \
onlyoffice/communityserver

Edit the command if you don't need any components.

Copy the DB into /opt/onlyoffice/Data , restore it.

Copy the Data folder into the container.

Check the portal data.

If you get any issues with it, please, contact us.

OK, I see. Thanks.

Little more questions :
In the process you dont talk at all about "files" ( Files in Documents /attach in projects etc.. ). Where are they ? And what to do for migrate them as well?

They are also stored in the /var/www/onlyoffice/Data folder inside the container. So, in the backup of the folder process you will backup those files also.
